We canned 38 pints and 28 quarts of deer meat this weekend ...if you have not tried it you should! It is outstanding! We invested in a American Canner 930 14 quart and 19 pint capacity canner and have been giving it a work out! We also hve a bunch of tomato plants out and green beans and plan on canning just about everything we can get our hands on!

ET ...I have many dishes I want to try with this canned meat...and stroganoff is on that list! My wife and I work a lot of hours and we are always looking for quick healthy meals to prepare...I kind of took over my sons garden and tripled its size....lol... so we will have plenty to can once it starts producing...his wife is making jellies and home made bread and trying to avoid store bought foods..and is going canning crazy! I love it!

I love it! I enjoyed reading your response. Quick healthy meals can be the best tasting when they aren't saturated with spices masking flavors. There is a lot of work with canning operations and caring for a large garden but the rewards make it worthwhile. Your last comment about homemade bread and jellies just made saliva glands go into overtime, chuckle. Thanks for sharing.

Well all of this talking of eating deer meat has got me headed to the kitchen. I made some pastrami (actually corned beef since I didn't smoke it) last week out of about 8 pounds of deer roasts. I did half in the oven and half in the sous vide and I need to continue my evaluations of which I like better :-)

Well all of this talking of eating deer meat has got me headed to the kitchen. I made some pastrami (actually corned beef since I didn't smoke it) last week out of about 8 pounds of deer roasts. I did half in the oven and half in the sous vide and I need to continue my evaluations of which I like better :-) Sounds good! I had some Gator/pork brats yesterday grilled...it was outstanding!

I canned some venison a few years ago which didn't turn out very good. Perhaps I shouldn't have first smoked it. Before canning, it was delicious. My wife is going canning nutz! We are soon going to try a recipe she found for canned venison summer sausage. Sounds interesting. Otherwise, I cannot keep up with her with new shelving in the basement for everything she is canning! Anyone finding canning lids lately? They seem to be even more scarce than ammo.

I always thought that when I retire I would really go nuts canning things. Hopefully in 7 years and 10 months I can make that decision. LOL. I think you could store 2 years worth. This way you would always be a year ahead. Once you eat a years worth, make another years worth and rotate stock. Great food, fun doing if retired, healthy, and insulated from shortages, inflation and most contaminants of a factory operation.
I have often wondered if there are any canning methods that use metal cans. Glass is almost fool proof in terms of sanitizing and sealing but wow......lots of food in fragile containers. Probably worrying too much.
Great topic in general and even better under the times we are living in.
Funny story: My deer hunting buddy puts up 2 deer in cans for his DOG! Puts it over some dry food. Would you believe that the dogs loves it? LOL

I know of many hounds man including myself who have fed raw deer meat to the hounds …especially during the winter months and do really well ! A word of caution…you can over “protein “ a dog

Squirrels are also delicious canned all you have to do is brown them in the frying pan and they're ready to eat then.

I skin them, clean em, wash them very well and freeze them whole. When I get enough to can 7-9 pints I thaw the lot and cut up and raw pack can. Takes 2 greys per pint at least. They will be falling off the bone when you fry them.
