What are the choices for breech plugs when getting a new barrel? Are there any that a gunsmith can easily tap the barrel for? My plan is to use either a 10ml or a Stevens 200 action.

If it were me with the Stevens action use a .308 size boltface and a Petes plug that you can use .45ACP or cutdown .308 primed cases. With the 10ML I would use the proven Savage plug. Pacnor makes DD barrels for either. Or chance someone else chambering for the plugs.

you need one of PA petes plugs if your going to use a locking lug action. I used one on my striker pistol build. he threads them to fit savage factory/ replacement barrels and they take a 45 ACP or cut down standard (.470") case head case.

That is Rick Bibby's, (rbinar), design. He machined them from a 5/8-18 grade 8 bolt. Its about 1/2" shorter than the standard Savage OEM plug. It will not thread into a factory 10ML2 barrel. Those pictures on Ricks web site were of the two plugs he made for my .45 Pacnor conversion. He supplied his customers two plugs as part of his "standard" Pacnor conversion package. You could get them tapped for a standard Savage vent liner or you could get them with a pressed in bushing, or one of each...what ever your preference was. God rest his soul.

I guess at this time there are no options other than the Savage thread design.
If I get a savage barrel then I can use it in either the 10ML or centerfire actions right?

thats correct but in the centerfire you will need Pete from pa machines hybred savage plug which except cases.
