This set of three knives from japan is of the highest quality and all anyone would even need in the kitchen. Not at all cheap but top quality and it doesn't take long to see the difference. Balance, cutting edge, feel, sharpness and the slicing, dicing and use is a pleasure without peer. Yes the three were around $250.00 but worth every penny of the cost. My first effort was to take a dill pickle and lay it on the cutting board and reduce it to thin slices as effortlessly as if the knife cut through without even attempting to slide the pickle. Wow, what an edge. The three is all I will be using. a great gife from my son.

Happy birthday, Ben. I think I recognize the logo on your knives. My hunting buddy last year gave me one, just one, to be used in butchering venison. It's a wonderful knife.

Happy B-Day, Ozark! Great looking set. They sure make my "college apartment/roomate abused" knives look pretty sad. Heck, I don't think we have 3 knives with the same color handle!

I was at a flea market down in South Texas last week and saw some nice knives at a real good price. Wanted to buy them, but the guy only took cash which I was a bit short on at the moment.
Had a pocket full of plastic which he wasn't particularly interested in. Shame. They would have looked nice in my kitchen. The ones there now have so many nicks in them they kinda look almost like they have serrated edges. Just don't cut that way any more.

I couldn't be more proud of a gift. It is not believable how they cut. Even the winter type tomatoes with the tough skin doesn't even let the edge slide lightly without beginning the cut. Nothing like a poor boy experiencing top quality rich mans tools. I am afraid to touch them with the lansky at this time. LOL

You have a good son, thats alot better than some socks or a tie.
Those are really nice. I always look at those in the catolog a say to myself I should really buck up and buy some some day. As with most tools you would never regret buying quality after the fact, but it is hard to part with the dough sometimes.
Here is an interesting fact so I am told. When you use a steel on a knife, it is to straighten the dents in the blade out, not to remove steel and form a new edge. I guess some of the diamond coated ones do remove some steel. I never knew that and I always thought I was making a new edge.

I have recently learned a lot about the sharpening and care of knives. With use the keen edge of the knife curls over enough to present the curl to the item rather than the edge itself. The correct use of the steel moves the curled edge back straight and vastly improves the cutting effeciency. I read that a razor edge improved after allowed to sit for a day or so after sharpening. That is a bit hard to believe. Anyway, I am sharpening everyones knives who will bring them to me. It is fun for me to do this. And the Sons gift. Man, what a difference top quality means. I am really enjoying them.
