I go after Morell's (Wood Fish) in the spring but I have not tryed anything else. I see them in the woods but I am to busy hunting to bother or they get torn up in my pocket before I get them home and verify they are what I think they are.

A Sheephead is the same Fungi as Hen o' the woods. A cauliflower mushroom is not the same. The sheephead is tastier but both are edible. I hunt the Morels in turkey season, but the one that gets overlooked then is the Pheasant-back mushroom or Dryad's saddle. They grow everywhere in the spring and it one of those that you can't mesh up identifying. When you cut them with a knife they smell like a fresh watermelon rind. You're better off to google your question and usually there are cooking and canning tips for each species. Good Hunting!
