I've waited almost a year for garden fresh tomatoes. The wait is over and am enjoying a toasted cheese and tomato sandwich with a touch of mayo. Yeah I know bacon would have kicked it up a notch but alas I had to reduce bacon intake for my health.

That cheddar cheese slice comes from Black Diamond Canada. Regardless of its manufacturing origin, if it makes my taste buds happy I buy it. The only argument I have with my taste buds is when they demand more of a good thing than what I should be eating, chuckle.

Another enjoyment from the garden is fresh beans for my bean-vegetable soup. My taste buds go squirrely over this one, chuckle. Below is soup before my final ingredient. For final ingredient I use sour cream instead of cream. Can’t add sour cream until the soup stops boiling. This soup tastes good at almost any temp. Anyway time to enjoy a bowl or 2-small bowls, chuckle.

My white bean seasoning blend. I have another for other beans too. Both are similar and quite mild. I grow the panca peppers and you can buy it on Amazon too. 1.5 Tbs Kirkland No Salt Seasoning 2 Tsp Aji Panca Powder 2 Tsp Paprika 2 Tsp Ground Cumin 2 Tsp Kirkland Granulated Garlic 1 Tsp Ground Tumeric 1/2 Tsp White Pepper Makes almost 5 TBS of seasoning

My homemade soup is mostly constructed with vegetables and chicken broth as I enjoy tasting the natural flavors. But a little spicing up for a change shouldn't hurt. Thanks for the suggestion.

The heat is very low. Aji panca on average are milder than jalapeno. I use that Kirkland no salt seasoning for tons of stuff. I look at spices just like i look at black pepper. I dont have a shaker with both salt and pepper in it. There is virtually no reason my chilli, taco or bean seasonings should either.

Ripe jalapeno jelly. No salt added. Just vinegar, homegrown peppers, organic sugar, fresh lime juice and pectin.

Jalapeno and bacon scalloped taters. This is actually very mild. Almost all the peppers are on top while it bakes. Its only 2 good sized jalas with seeds removed. Super simple recipe too. Just get 1 box of scalloped and 1 box of au gratin. Half the amount of butter it calls for but add some real cheese. Pour 1 pack of the dried taters in your casserole dish. Top them with half the cheese and half the bacon. Its only a couple tbs of bacon. Repeat with the other pack of dried taters, cheese and bacon. Pour the heated sauce (per directions) over the dried taters. Add some chopped jala on top and bake per directions. Thin sliced onion optional.

About 4tbs of bacon crumbles, maybe 1.5 cups of shredded cheese and a couple mildish jalapenos. Get either Betty Crocker or Idahoan potato casseroles for the base. Just cut back on the butter 50% for the cheese and bacon. SUPER SIMPLE.
