I finally had some time today to make some more elk. When I made my elk stix a month ago, I initially tried using my Cabelas 20# stuffer. It did not work at all. The meat oozed past the piston and made a huge mess. I ended up using my Jerky Cannon and doing it very slowly. I asked a question on a sausage forum and the guys said try the 5# stuffer. It is a lot less meat to push through the little 3/8" tube and it works well for stix. I searched and saw that Grizzle (the tool company) has a 5@# stuffer for $65 on black Friday. I ordered it as that was a great price. The drawback is it does have nylon gears. Well, I also saw that LEM has metal replacement gears for ~$25. So I am still at least $30 cheaper than the higher priced ones that come with metal gears. Changing the gears out took all of 2 minutes. I gave them a good coating of food grade grease and off we go. I put my meat mixture in the 5# stuffer and slid the collagen casings on the skinny tube and it went perfect. The little stuffer moves around a but so I will bolt it to a poly cuting board and use some non-skid stuff underneath. Can't be scratchin up Mama's granite countertop.

Oh yeah, sorry about that. Here ya go: This is after smoking and a few hours in the dehydrator. Next step was trimming them and vacuum sealing them. These came out a little fatter as the casings were 23mm vice the 19mm I used last time. Taste is still very good, IMO.
