Here's some breakfast sausage recipes that I tried this year. These were taken from a book I picked up last year with a few variations of my own... After 40# they're still tasting good Zen
Spicy Garlic 3 lbs.
2 lbs. venison 1 lb. pork 1 small white onion, minced 4 large garlic cloves, minced 2 tsp. salt 1 tsp. black pepper 1 tsp. ground sage 1/2 tsp. ground thyme 1/4 tsp. ground nutmeg 1/4 tsp. ground ginger 1/8 tsp. ground allspice Hot Italian 3 1/4 lbs.
2 lbs. venison 1 1/4 lbs. pork 2/3 tsp. salt 1/3 tsp. pepper 1 1/3 tsp. fennel seeds 1 Tbsp. oregano 1/2 tsp. garlic powder 1/2 tsp. cayenne pepper 1/3 tsp. finely chopped red pepper flakes
Hunters 4 lbs
2 lbs. venison 2 lbs. pork 1 Tbsp. salt 1 Tbsp. pepper 1/4 tsp. nutmeg 1/8 tsp. cloves 1/4 tsp. allspice 1/2 tsp. garlic powder 1/4 tsp. cayenne pepper

I’m almost drooling over these delectable sausage recipes.
Putting up 3-recipes with garlic and venison is a tease. But my 1st choice to try would be Spicy Garlic.

Panhandle I’m almost drooling over these delectable sausage recipes. Putting up 3-recipes with garlic and venison is a tease. But my 1st choice to try would be Spicy Garlic. Thanks for sharing. Ed All three are great in their own way, but spicy garlic seems to be the slight favorite for us. Zen

Panhandle.............Did you just grind this and make patties or are you stuffing links with this mixture?

Panhandle.............Did you just grind this and make patties or are you stuffing links with this mixture? Smokepole I ground it and stuffed it into 1# plastic sausage bags. I plan on stuffing some in hog casings next time and putting them in the smoker. Zen
