Rusty, for the life of me, I can't figure out how you'd do that, unless you are talking about making bulk sausage like breakfast sausage and made it into patties.

I have the round thingys that fit on my grinder. As the meat comes out If you have the casings on the snout ,the meat is pushed into the casings. Was wondering if anyone did it without the casings?

I would think that if you could make a continuous grind and deposit the meat as it comes out the tube onto pieces of wax paper supported by your cutting board, having another person cutting the Slim Jim sausage sticks as you reach the end of the paper and then start another line right beside the first and so on. After you get the wax paper full of sausage jims, put it in the deep freeze. Just before it completely freezes you cut them into breakfast sausage links and continue to freeze. After it is frozen you can vacuum seal them and as long as you start cooking them before they thaw out your good to go.

Why not cook them and then freeze them? Precooked sausage heat and serve. Where have i heard that before?
