I tired a recipe found on-line. It was very good but I am searching for other pickled heart recipes.
I first washed the heart and set for 24 hours refrigerated.
The recipe I used went like this.
Boil heart for 30-45 minutes with a tablespoon brown sugar added to covering water.
Let cool in refrig for 24 hours, Cube (1/4") heart and place in quart jar with one medium sliced onion, 1/2 tsp salt & 1/2 tsp black pepper.
Add pint cold water and fill remainder of jar with apple cider vinegar. Let set in refrig for 2 to 3 days.
(I added two smashed cloves of garlic which were not list in recipe)
I was surprised how tender the heart was! It was delicious.
I have three more venison hearts and I am looking for additional recipes or suggestions.

Cook hearts the same length of time. Slice cooled heart into thin strips, Put heart in jaralong with a large sliced onion and add cooled pickling mixture. (see below) Add 1 cup water and 1 cup vinegar to cover meat as needed. Let this set for at least 24-48 hours before eating, this lets the flavor get into the meat.
Pickling mixture, Take 2-1/2 cups of water, 4 tablesp. of pickling spice, simmer for 3-4 minutes, add 1 cup of white sugar while mixture is still hot and stir.
