Ingredients: 1 lb. dried red beans 1 lb. ground venison (browned) 3 medium onions chopped 1 1/2 tsp salt 1 1/2 tsp black pepper 1 tsp ground cayenne pepper 3 tbsp Louisiana hot sauce 1 tbsp rosemary 1 tbsp thyme 1 tbsp tarragon 1 tbsp oregano Rinse the beans and soak in water for 30 minutes. Drain, then cook in just enough water to cover for about 30 minutes over a low fire or in a crock pot. Add the remaining ingredients, cover and simmer for 5-6 hours, or until the beans are tender. Stir occasionally during the cooking time. This makes a big batch and then we serve it over rice.
