On the third year of trying sausage recipes, I have it worked out to where I think the sausage is quite good. I hope others may enjoy.
Venison Breakfast Sausage Nov., 2009
8 lb. meat- 2/3 venison, 1/3 pork chops 2 tbsp. salt 2 tbsp. black pepper 1 tsp. red pepper flakes* ½ tbsp. ginger ½ tbsp. mace ¼ tbsp. nutmeg 1 tsp. garlic powder 3 tbsp. fennel seeds ½ tsp. cayenne pepper ½ tsp. allspice
*optional, makes it mildly hot. sage or cloves may be added, if preferred.
Procedure: Cut the venison and pork chops (with the fat left on) into chunks, and grind them through a coarse disc, roughly 2 chunks of venison for one of pork. Assuming that you don’t have a meat mixer (like me), take the pile of ground meat and press it flat on a pan or sheet. Sprinkle half of the spice mixture evenly across the top of the meat. Then mix the mixture by hand, and again spread it flat on the pan. Sprinkle on the rest of the spice mixture, and knead that all together. Run it through a fine disc grinder, and form it into patties of the size desired.
