I've been butchering since before I could walk, litterally. My dad had worked for most of the local farmers, and my maternal great grandpa was a butcher. Dad and grandpa would go to an auction and dad would pick out the beef, and they'd bring it home and the family would slaughter it. Grandpa passed away 30 years ago, but dad still did a fair amount of butchering over the years, including our deer, and for several years my neighbors deer also. Anyway, back to the point, 2 years ago I finally picked out half a dozen butcher knives to use here at the house on my own deer. They were all Dexter knives, which are okay. I got a couple butcher knives, a few boning knives, and a 12" cemiter knife for cutting steaks. The following year I happened to used my cheap ol walmart fillet knife on a deer and quickly came to the conclusion that it was the best boning knife I'd ever used. The 9" version might be a little better than the 7 1/2" that I have. Dad has a 9" and I talked him into using it this year, and he loved it too. Now all 6 of our boning knives collect dust Just thought I'd share.

I have been using fillet knives for years.They are cheap and easily resharpened with the Accu-Sharp.

I have been using fillet knives for years.They are cheap and easily resharpened with the Accu-Sharp. I put new Rapalla fillet knives in all our stockings every Christmas. Great in the kitchen also. Does anyone know where to get those serrated electric knife blades sharpened? Thanks Rusty

I have one of those at home and another one at my hunt club. If you use it before each use of your knives you will never have to put them to a stone.
