My favorite is the .270 win. using 130 gr. BT. Through the ribs, shoulders, or stem to stern, close or far away it gets the job done. IMO Our deer run small compared to the Northern deer.

I have always tried to wait for a broadside shot. And hit em right behind the should. This year was the first kill with the Savage 300 gr Remington went in came out the other side. Very little meat lost. All the other deer were shot with 12 ga. smooth bore. a lot with low recoil slugs. IMO you just don't want to hit the shoulder with anything it tiers up to much meat. Although a shoulder shot will drop them on the spot.

I keep a ledger so to speak with info on all the deer I've killed in my lifetime .
And strangely one of the best killing rounds I've used has been the 260 REM . If memeory serves I think I've taken maybe 30 deer with a pair of 260's and of those deer over 2/3 rd's dropped at the shot .
OF the 10 deer I've killed with a 45-70 all but one dropped at the crack of the rifle .
The 444 Marlin has certain hammerring capabilities as well . I've taken a dozen or so with it and all but 2 dropped at the shot .
After looking back through my ledger I could cite a whole bunch of calibers as I have about 200 deer taken over the last 35 years .
Of those quite a few were killed with head shots , but the vast majority were killed with heart/lung shots .
Personally I feel when a person learns their own weaknesses and capabilities any rifle with a decent bullet will make a fine meat gun provided the person is willing to NOT exceed their limitations !

I used a Win 670 in .243 for years. Shot Win 100gr ammo until Federal came out with their Premium line. Shot the Fed Premium .243 100gr BTSP for years. I still have the rifle and my boys argue over who gets it when I'm gone.
I went to a M70 .270 after the boys made a very out of line comment. I was shooting at a stand still doe and missed. Boys commented that the doe had "bullet proof fur!" . Made those boys of mine walk a very long and large circle looking for that deer.
Win .270 130 gr Ballistic Sivertip does it for me. Also shot some Fed Premium 150 gr Nosler Partition but decided it was to much for an Arkie deer.
