Mr Ben was kind enough to PM me with this recipe. I thought all could enjoy a good possum dinner.
Skin and dress the possum and begin preparations: 1. Hew a slab of green hickory wood two inches thick and a foot square. 2. Put hicory slab over hot coals until it is heated through. 3. Put foil wrap over heated board 4. Cut possum into serving size pieces. Cook slowly until meat is tender. 5. Remove meat and foil wrap. Coat the board with butter and salt to taste. 6. Throw the meat and foil wrap away and eat the hickory board. Good sourse of fiber. Has few calories and zero nutritional value.

. That reminds me of a recipe I got from an old timer back when we were pups and hunting sandhill cranes. Met him in a restaurant in a small town where we stopped for lunch. He asked if we knew how to cook the cranes. Offer his suggestions. Of course we listened intentlly(we were dumb back then and gullible too ) He listed a bunch of spices and said the secret was to boil them with a large rock. After a week, throw away the crane and eat the rock. He walked away laughing and we sat there and knew we'd been had.

And there was the game warden who caught a man with a crane he had killed. After being told the bird was protected and it was illegal to kill them the warden ask why he had killed it. The hunter replied that his family needed food and he felt responsible for putting something on the table. The warden felt compassion and decided to not arrest or fine him. While departing the warden was curious and asked: "How does those crains taste?" '"My family can't tell a difference between them and the bald eagle."

I remember as a kid shooting birds with my bb gun. My uncle insisted that anything shot had to be eaten. I learned that robin was definitely better than blue jay or meadow lark and that everything was better than cormorant.

After reading this I am wondering how many have actually eaten possum? Back in the 40's and 50's we ate a lot of wild game that included possum,groundhogs,coon,rabbits,squrrel and turtle.And even once in awhile we had bear and deer.Was more bear than deer back then. Its been many years since I have eaten possum but the best I can remember it tasted like pork ribs that had been boiled and salt and pepper added. We would catch one put it in the well house for a week and feed it table scrapes before cooking.Put it in a pressure pot for about 30 minutes then bake in the oven till brown. My dad used to tell me about his mom making robin pie when he was growing up.???I asked her one time and she said she did.

I have tried frog legs, crawfish, Polk greens, dandoline, sour dock and crowfoot. Dove I don't care for and I like sasafras tea. Persimmon and mulberries are fine right off the trees. Persommons are best after they have been frozen. Wild plum jelley, and muskidine jellys are great. Hog head cheeze (souse meat} ares favorite of mine. Cornbread with cracklens mixed in is fine eating. Baked coon with sweet potatoes is good if the grease is well drained during cooking. I could go on but don't want to ruin everyones appetitite. Be

Ozark you have to try Porcupine I bake those on top of the taters and the fat makes the taters better you would think that they would taste like a Hemlock or spruce tree for what they eat but they don't.
