Is there such thing as a 40 cal sabot that would use a .375 or .358 bullet?

Yes there is, both MMP and Precision Rifle sell them. Both are actually made by MMP. The PR version is a bit longer than the MMP. They do not hold up very well to even hot BH209 loads with most bullets.

After looking at the MMP site, I only see 36 cal and then jumping to 45 cal. Am I missing something? I am asking for a true 40 cal, not a 45 cal holding a .40 bullet. Thanks

I think he may have mis-spoke or thought you were wanting a 45/35 sabot

Oops sorry. i thought you meant 45x357
No there are no 40x357 sabots that ive seen
