Knife Sharpener

I am addicted to knife sharpeners. I have quite a few different makes and models and they all have their good and bad points. The old school Lansky worked well for me for years and I have many different stones that I used to get the job done. I got lazy and went with a Chef's Choice electric and it does an ok job and is reasonably quick. I upgraded to a Wicked Edge and find it is outstanding at creating a razor sharp blade that cuts amazingly well. I then tried a Edge Pro Apex and it works ok, but takes a while. I then got the Ken Onion version of the Work Sharp and had good results but it was not as repeatable as I like. It definitely took some learning to get consistent results. My biggest gripe is how long it takes to create the edge I want.
I read a lot of good reviews on the Ken Onion Grinding Attachment for the Work Sharp and I tried it. It uses longer belts than the regular KO sharpener and a different method of edge grinding. I watched a few videos on it and gave it a shot. WOW! This thing is amazing. I have been using 22° angle and I have sharpened and polished 10 or 12 knives to absolute razor edges and have not used a different set of belts. They are finally on their last legs but I still get a mirror edge on the blade when I am done and even on cheap knives it gives a hair floating edge that is amazing. It takes me about 5 minutes per knife to get a razor edge. After I use the knife I run it down a 12" smooth butcher steel and it is super sharp in a few seconds. I decided to test the ability of the sharpener tonight by sharpening a $8.00 Schrade Old Timer fillet knife. The long thin flexible blade may be a challenge so if it works on that it should do any thing I ask of it. I went through the belts and finished up with the leather stop and it is sharper than it has ever been. I had a steak in the fridge so I filled it into jerky slices with very little effort. I do like this sharpener. It is a little costly as you have to buy the Ken Onion Work Sharp then purchase the grinding attachment but it works as good as the high $ Wicked Edge but it is done in a fraction of the time.
