The main problem I have had recently with geese is that they have been exceptionally tough. I am going to try to hang them for a few days next time. The good news is that my 2 y.o. springer did real well.

I tried cutting goose meat real thin and fried after rolling in flour and adding pepper and salt. This brought it a long way and was pretty good. It's nice to feel that you can actually eat what you shoot!
